I really didn't follow the recipe. Just too time consuming at the wrong times. So instead, I mixed the dough, left it over night, kneaded it in the morning at intervals about three times and finally baked it in a tin. The dough was very soft and sticky but looked good. Took much longer to rise than a normal loaf at each stage.

And tastes lovely. A proper sourdough flavour with a lovely chewy texture and a delicious crust. It smells different too, not sour but sweet.
